Recipe for Crispy Cod Taco’s with coleslaw for 2/3 persons

Today, I’m excited to share with you my recipe for Crispy Cod Tacos, a delightful marriage of Dutch Kibbeling and traditional Mexican ingredients, creating a mouthwatering dish that will leave your taste buds begging for more.

Ingredients:

For the Crispy Cod:

  • Fish (I used Kibbeling, a dutch type of fried fish which is made of Cod with batter and fish spices)
  • Tortilla wraps (medium-sized)

For my own Coleslaw variation:

  • 3 tablesppons of mayonnaise
  • 2 tablespoons of Smokey Sriracha from “De Keuken van Sjaan” (You can ofcourse use any sriracha you like, but this one really adds some nice flavors)
  • 1 Tablespoon of white wine vinegar
  • Black pepper to taste
  • Salt to taste
  • 1/3rd of a white cabbage
  • 1/3rd of a Carrot
  • 1/3rd of a Fennel

For the Toppings:

  • 1 Avocado
  • Cilantro (optional)
  • 1 Red onion

Instructions:

1. Prepare the Crispy Cod:

  • If you’re using pre-made Kibbeling from the supermarket, simply follow the instructions to cook it until golden and crispy. If you prefer to make your own batter, you can coat the cod pieces in a mixture of flour, salt, pepper, and your favorite fish spices, then fry them until golden brown and crispy.

2. Make the Coleslaw:

  • In a bowl, combine mayonnaise, Smokey Sriracha, white wine vinegar, black pepper, and salt to create the dressing.
  • Shred the white cabbage, carrot, and fennel into thin strips.
  • Toss the shredded vegetables with the dressing until well coated. Adjust seasoning to taste.

3. Prepare the Toppings:

  • Slice the avocado, chop the cilantro, and thinly slice the red onion.

4. Assemble the Tacos:

  • Warm the tortilla wraps in a dry skillet or microwave for a few seconds to make them less likely to fall apart.
  • Place a generous portion of the crispy cod onto each tortilla.
  • Top the cod with a generous serving of the homemade coleslaw.
  • Add slices of avocado, a sprinkle of chopped cilantro, and a few slices of red onion on top.

5. Serve and Enjoy:

  • Serve your crispy cod tacos immediately, with extra Sriracha or your favorite hot sauce on the side for those who like it extra spicy.
