Sweet Potato Waffles with Jerk Chicken

Ingredients:

  • 2 Small sweet potatoes or 1 large one.
  • Olive oil (I used olive oil spray)
  • 240 gram flour (I used regular flour, but you can use any type of flour you have at home)
  • 350 ml milk (plant-based milk will work as well)
  • 1 Egg
  • 1 tsp baking powder
  • 120 gram of grated cheese
  • Pinch of salt & pepper
  • 1 Avocado
  • Coriander (optional)
  • Red onion or spring onion
  • Cooked spinach
  • Garlic
  • 2 Chicken (thigh) fillets
  • Coriander (optional)
  • T- rex cherry bbq sauce (optional
  • Fresh chili peper (optional)
  • Dry Jerk rub (or make it yourself with the ingredients below)
    • 1/2 tsp Garlic
    • 1/2 tsp Himalayan salt (or sea salt)
    • 1/2 tsp Black pepper
    • 1/2 tsp Ground allspice
    • 1/2 tsp dried thyme
    • 1/2 tsp Onion granules (or onion powder)
    • 1/2 Dried habanero pepper
    • 1/2 tsp brown sugar
    • 2 stalks of spring onion

Preparation:

  1. Marinate the Jerk Chicken: Begin by seasoning the chicken fillets with the dry spices mentioned in the “Dry Jerk rub” section. Massage the spices into the chicken breasts, set them aside, and let them marinate for 10 minutes.
  2. Cook the Chicken: After marinating, place the chicken fillets on a greased skillet or oven-proof pan. Add the chopped spring onions as well. Grill the chicken for about 15 minutes, until they are cooked through and have a beautiful flavor-packed crust.
  3. Prepare the Sweet Potatoes: Peel the sweet potatoes, cut them into pieces, and cook them for approximately 20-25 minutes until they are tender.
  4. Mash the Sweet Potatoes: Once the sweet potatoes are cooked, use a potato masher to mash them thoroughly. Transfer the mashed sweet potatoes to a sieve and use a spoon to press out as much water as possible. Then, place the mashed sweet potatoes in a mixing bowl.
  5. Prepare the Waffle Batter: To the mixing bowl with the sweet potatoes, add the flour, egg, milk, grated cheese, salt, and pepper. Mix all the ingredients until well combined and a smooth batter forms.
  6. Heat the spinach: Put the spinach in a pan with a little bit of olive oil and some garlic. Lay them on a piece of paper towel to dry a bit.
  7. Cook the Waffles: Preheat your waffle griddle. Spoon 2-3 tablespoons of the batter onto each side of the griddle. Cook the waffles for 5-7 minutes, or until they are golden brown and slightly crispy on the outside while remaining soft inside.
  8. Assemble the Dish: Once all the waffles are cooked, plate them up alongside the jerked chicken breasts. Add a side of sliced avocado, cooked spinach, and a sprinkle of coriander if desired. You can also add some red or spring onion for an extra kick of flavor.
  9. Serve and Enjoy: Your savory Sweet Potato Waffles with Jerk Chicken, spinach and Avocado are ready to enjoy! For an optional burst of extra flavor, drizzle some T-rex bbq sauce over the dish.
