  • Catalan Pork sausages (But you can use beef sausages as well)
  • Fresh spinach
  • Fresh fennel
  • Light cooking cream
  • Pasta of choice
  • Red chili (Thai bird eye chili for an extra kick)
  • Nutmeg
  • Dried fennel
  • Black pepper
  • Chili flakes
  • Chili powder
  • Parmesan cheese
  • Garlic

Preparation:

  1. Prepare the Pork Sausage: Start by cooking the pork sausage in a skillet over medium heat. Remove the skin (pig intestine) Break it into crumbles using a spoon or spatula. Cook until the sausage is browned and cooked through.
  2. Garlic: Crush 4 garlic cloves and add them to the pan with the sausages.
  3. Fresh fennel: Add finely chopped fresh fennel to the skillet. Let it cook alongside the sausage until they are wilted and tender.
  4. Spice Infusion: Introduce the heat by adding finely chopped red chili (use Thai bird eye chili for an extra spicy kick) to the skillet. Adjust the quantity based on your preferred spice level. Sprinkle in a pinch of nutmeg, dried fennel, black pepper, chili flakes, and chili powder. Stir to combine, letting the spices meld with the sausage and vegetables.
