Crispy Chicken Burger

Time: 50 Minutes Prep / 20 Minutes Cooking

If you’re craving a spicy and flavorful twist on classic chicken burgers, look no further. These Spicy Chipotle Chicken Burgers are a mouthwatering delight that’s easy to prepare and quick to satisfy your taste buds. Let’s dive into the recipe!

Ingredients:

For the Burgers:

  • 2 big chicken breasts
  • La Morena Chipotle Sauce (adjust to your preferred level of spiciness)
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of chili powder
  • 1/4 teaspoon of cayenne pepper (adjust for heat)
  • Black pepper, to taste
  • 20+ cheese slices (or your favorite cheese)
  • Sugar-free cornflakes (for the crust)
  • Garlic
  • Buns of choice( I like to go for a brioche, but a regular bun will do.)

For the Guacamole:

  • 2 ripe avocados
  • 1 small red onion, finely chopped
  • 1-2 cloves of garlic, minced
  • 1-2 tablespoons of fresh lime juice
  • 0.5 tomato
  • 1 fresh Jalapeno (If you can handle the spice)
  • Cilantro
  • Salt and pepper, to taste

Preparation:

For the Burgers:

  1. Start by preparing the chicken breasts. Pat dry and marinate for at least 30 minutes in a bowl with the La Morena Chipotle Sauce, smoked paprika, chili powder, cayenne pepper, black pepper and minced garlic. Adjust the amount of chipotle sauce to achieve your preferred level of spiciness.
  2. Crush sugar-free cornflakes in a plastic bag or using a rolling pin until you have fine crumbs. Place the crumbs on a plate.
  3. Dip each spiced chicken breast into the cornflake crumbs, pressing gently to adhere the crumbs to the chicken.
  4. Preheat the oven to 200 degrees and cook the chicken in the oven for 20 minutes.
  5. Cut the brioche in half and spread with a small layer of oil. Fry the bread briefly in the pan, giving it a crispy coating. This will prevent the burger from getting soggy from the guacamole or any other sauce.
  6. Place cheese slices on top of each chicken breast to melt when you only have 1 minute left.
  7. Remove the chicken burgers from the heat and let them rest for a minute.

For the Guacamole:

  1. While the chicken burgers are cooking, prepare the guacamole. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
  2. Mash the avocados with a fork until you reach your desired guacamole consistency (smooth or slightly chunky).
  3. Add finely chopped red onion, cilantro, minced garlic, jalapeno, chopped tomato and fresh lime juice to the mashed avocados. Mix everything together.
  4. Season with salt and pepper to taste. Adjust the lime juice, salt, and pepper to your preference.

To Assemble:

  1. Place a crispy chicken burger on a burger bun.
  2. Top the burger with a generous spoonful of the homemade guacamole.
  3. Serve immediately, and enjoy the spicy, cheesy, and creamy goodness of these Chipotle Chicken Burgers!
