Protein Waffles with Chipotle Pulled Chicken

Looking for a savory twist on classic waffles? These protein-packed waffles with chipotle pulled chicken are perfect for a hearty lunch or dinner. With added Greek yogurt for extra protein and topped with flavorful pulled chicken, this dish is not only delicious but also filling. Here’s how you can make them!

Ingredients:

For the waffles:

  • 200g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 250ml Greek yogurt
  • 50ml water
  • 2 tablespoons olive oil (for on the waffle iron)
  • 150g shredded cheese (optional, for extra flavor)
  • 200g pulled chicken (Cooked and shredded)
  • 2 sprigs of spring onion, chopped

For the pulled chicken:

  • 400g chicken breast
  • 1 teaspoon paprika powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 4 tablespoons chipotle sauce (I used La Morena’s Chipotle)

Instructions:

1. Prepare the Pulled Chicken:

  1. In a bowl, season the chicken breast with paprika powder, garlic powder, salt, pepper, a table spoon and a table spoon of olive oil.
  2. Heat a pan over medium heat, then add the seasoned chicken breasts. Cook until the chicken is golden brown on both sides and fully cooked, about 7-10 minutes.
  3. Once cooked, shred the chicken using two forks and mix with the chipotle sauce. Set aside.

2. Make the Waffle Batter:

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, beat the eggs, then add Greek yogurt and water, mixing until smooth.
  3. Gradually fold the wet ingredients into the dry ingredients, stirring until well combined.
  4. If desired, stir in the shredded cheese for extra flavor.
  5. Gently fold in the pulled chicken and chopped spring onions.

3. Cook the Waffles:

  1. Preheat your waffle maker and lightly grease it with a bit of oil.
  2. Pour the waffle batter into the waffle maker and cook according to the manufacturer’s instructions until golden and crispy.

4. Assemble the Waffles Like a Burger:

  1. Serve the waffles stacked like a burger. For toppings, I used avocado slices, red onion, shredded carrots, and cucumber for a fresh crunch and added texture.
  2. Add some extra chipotle sauce if desired to bring everything together.
