Mexican Style Sweet Potato:

Ingredients:
For the Mexican Style Sweet Potato:
- Sweet potato, peeled and cut into bite-sized pieces
- Minced beef
- Corn kernels
- Sour cream
- Shredded cheese (cheddar or Mexican blend)
For the Sauce:
- Shallots, finely chopped
- Garlic, minced
- Tomato, diced
- Lime juice
- Red pepper, finely chopped
- Black pepper, to taste
- Salt, to taste
- Smoked paprika powder
- Chili flakes, to taste
- Garlic powder
- Onion powder
- Cilantro powder
- Ginger powder
For the Guacamole:
- Avocado, mashed
- Red onion, finely chopped
- Tomato, diced
- Fresh cilantro, chopped
- Jalapeño, finely chopped
Instructions:
Prepare the Sweet Potato:
- Preheat your oven to 400°F (200°C).
- Toss the sweet potato pieces in olive oil, salt, and pepper.
- Roast in the oven until tender and slightly caramelized, about 25-30 minutes.
Cook the Minced Beef:
- In a skillet over medium heat, cook the minced beef until browned and fully cooked.
- Drain excess fat and set aside.
Make the Sauce:
- Add the shallots, garlic, dised tomatoes, lime juice and all of the spices in the blender.
- Blend it into a sauce and then add to the pan of minced beef.
- Then add the corn and let cook for a few minutes.
Assemble the Sweet Potato:
- Place the roasted sweet potatoes on a serving platter.
- Top with the cooked minced beef and the sauce.
Prepare the Guacamole:
- In a bowl, combine mashed avocado, chopped red onion, diced tomato, cilantro, garlic and jalapeño.
- Mix well and season with salt to taste.
Serve:
- Spoon the guacamole on top of the sweet potato and the minced beef.
- Add dollops of sour cream and sprinkle shredded cheese over the top.
- Garnish with additional cilantro and a wedge of lime for extra freshness.
