Loaded Potato With Pulled Chicken

This Loaded potato with pulled chicken and blue cheese sauce recipe is really something I accidentally came up with, but turned out great. It is cheesy, saucy, creamy and just delicious.

Ingredients:

For the potatoes:

  • 1 tablespoon of butter
  • Large potatoes

For the blue cheese sauce:

  • 100 grams blue cheese
  • 50 ml cooking cream

For the pulled chicken:

  • Chipotle sauce (e.g., La Morena)
  • Madame Jeanette sambal (optional, for extra spice)
  • Chicken thighs
  • Chicken or vegetable bouillon
  • Onion powder
  • Garlic powder
  • Smoked paprika powder
  • Ginger powder

For the toppings:

  • Cucumber
  • Salad leaves
  • Other veggies of your choice

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pat them dry with a paper towel. Pierce the potatoes several times with a fork.
  3. Rub the potatoes with butter and sprinkle with salt. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, prepare the blue cheese sauce. In a small saucepan, heat the cooking cream over low heat. Crumble the blue cheese into the cream and stir until the cheese is melted and the sauce is smooth. Keep warm until ready to serve.
  5. For the pulled chicken, bring a pan of water to a boil and add you chicken thights, together with the veggie or chicken bouillon block. Let it cook for about 10- 12 minutes.
  6. Next, place the chicken on a cutting board and pull it apart with 2 forks. Then add the chicken to a bowl along with the chipotle, spices and madame jeanette sambal (if you want to use this)
  7. Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut a slit lengthwise in each potato and fluff the insides with a fork, then add the butter to make it soft and creamy.
  8. To assemble, place a generous spoonful of pulled chicken on top of each potato. Drizzle with the blue cheese sauce and top with cucumber slices, salad leaves, and any other veggies of your choice.
  9. Serve immediately and enjoy your loaded potatoes with pulled chicken and blue cheese sauce!
