Loaded Chicken Fries with Guacamole And Smoky Sauce

Ingredients:

For the Loaded Chicken:

  • 500g chicken thigh fillets, cut into bite-sized pieces
  • 1 egg, beaten
  • 100g cornflakes, crushed
  • Salt and pepper, to taste

For the Fries:

  • 800g fresh fries or potato parts
  • Salt, to taste

For the Toppings:

  • 200g bacon, cooked and chopped
  • 2 spring onions, thinly sliced
  • 100g Edam cheese, grated
  • 1 red pepper, diced
  • Optional: sliced jalapenos for extra spice

For the Guacamole:

  • 2 ripe avocados, mashed
  • 1 jalapeno, finely chopped (remove seeds for less heat)
  • 1/4 red onion, finely chopped
  • Handful of fresh cilantro, chopped
  • 1 tomato, diced
  • Salt, to taste

For the Smoky Sauce:

  • 1/2 cup mayonnaise
  • 1 teaspoon smoked paprika powder
  • 1 clove smoked garlic, minced (or regular garlic)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chipotle powder
  • Salt, to taste

Instructions:

  1. Prepare the Loaded Chicken:
    • Preheat your oven to 200°C (400°F).
    • Dip the chicken pieces into the beaten egg, then coat them in the crushed cornflakes seasoned with salt and pepper.
    • Place the coated chicken pieces on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and crispy.
  2. Prepare the Fries:
    • While the chicken is baking, cook the fries according to the package instructions until golden and crispy. Season with salt to taste.
  3. Prepare the Toppings:
    • Cook the bacon until crispy, then chop into small pieces.
    • Dice the red pepper and thinly slice the spring onions.
  4. Make the Guacamole:
    • In a bowl, mash the ripe avocados until smooth.
    • Stir in the chopped jalapeno, red onion, cilantro, and diced tomato. Season with salt to taste.
  5. Make the Smoky Sauce:
    • In another bowl, combine the mayonnaise, smoked paprika powder, minced garlic, chili powder, onion powder, chipotle powder, and salt. Mix until well combined.
  6. Assemble the Loaded Chicken Fries:
    • Arrange the cooked fries on a serving platter.
    • Top the fries with the cooked and crispy loaded chicken pieces.
    • Sprinkle the chopped bacon, diced red pepper, sliced spring onions, and grated Edam cheese over the chicken.
    • Drizzle the smoky sauce generously over the loaded fries.
    • Serve immediately with a side of freshly made guacamole.
