Ingredients:
For the Loaded Chicken:

For the Fries:
- 800g fresh fries or potato parts
- Salt, to taste
For the Toppings:
- 200g bacon, cooked and chopped
- 2 spring onions, thinly sliced
- 100g Edam cheese, grated
- 1 red pepper, diced
- Optional: sliced jalapenos for extra spice
For the Guacamole:
- 2 ripe avocados, mashed
- 1 jalapeno, finely chopped (remove seeds for less heat)
- 1/4 red onion, finely chopped
- Handful of fresh cilantro, chopped
- 1 tomato, diced
- Salt, to taste
For the Smoky Sauce:
- 1/2 cup mayonnaise
- 1 teaspoon smoked paprika powder
- 1 clove smoked garlic, minced (or regular garlic)
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chipotle powder
- Salt, to taste
Instructions:
- Prepare the Loaded Chicken:
- Preheat your oven to 200°C (400°F).
- Dip the chicken pieces into the beaten egg, then coat them in the crushed cornflakes seasoned with salt and pepper.
- Place the coated chicken pieces on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and crispy.
- Prepare the Fries:
- While the chicken is baking, cook the fries according to the package instructions until golden and crispy. Season with salt to taste.
- Prepare the Toppings:
- Cook the bacon until crispy, then chop into small pieces.
