Korean Style Beef

Ingredients:

For the meat:

  • 500g fresh entrecote, cut in cubes or small slices
  • 1 red bell pepper, in small pieces
  • 2 tablespoons sesame oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons mirin
  • 1 tablespoon brown sugar
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • Salt and pepper to taste

For the pickled veggies:

  • 1/2 cup vinegar (rice vinegar or white vinegar)
  • Half of a cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 pepper, thinly sliced
  • 2 tablespoons sugar
  • Pinch of salt

For the toppings: (optional)

  • Fresh cilantro leaves
  • Japanese mayonnaise
  • 1 jalapeno, thinly sliced
  • Sesame seeds
  • 2 spring onions, thinly sliced
  • Cheese of choice
  • Ciabatta bread or cooked rice and steamed veggies

Instructions:

  1. Marinate the beef: In a bowl, combine sesame oil, gochujang, mirin, brown sugar, minced garlic, soy sauce, grated ginger, salt, and pepper. Add the entrecote cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, the longer the better ofcourse.
  2. Prepare the pickled veggies: In a small pan, mix vinegar, sugar, and a pinch of salt on low heat until the sugar is dissolved. Add the thinly sliced cucumber, red onion, and the pepper. Toss to coat. Let it sit at room temperature for at least 15 minutes to pickle while you prepare the rest of the ingredients.
  3. Heat a skillet over medium-high heat. Add the butter and allow it to melt. Once hot, add the marinated beef in a single layer. Cook for 2-3 minutes on each side until nicely caramelized and cooked through. Remove from heat and let it rest in some aluminium foil on the side.
  4. In the meanwhile, grab your bell pepper and let it cook in the same pan as you used for your beef untill solft.
  5. If using ciabatta, cut it in half and toast it lightly. If serving with rice and veggies, prepare them according to your preference.
  6. Assemble the sandwich or your plate. Lay the Korean style beef on your sandwich or plate. Add pickled veggies, bell pepper, jalapeno slices, fresh cilantro leaves, sesame seeds, and spring onion. If using cheese, melt it over the beef under a broiler or in the skillet.
  7. Close the sandwich with the other half of the ciabatta or serve the beef over rice with the pickled veggies and toppings on the side. Enjoy your Korean style beef sandwich or rice bowl!
