Healtier Chicken Kapsalon

For those who may not be familiar, “Kapsalon” is a Dutch fast-food dish that typically consists of layers of French fries topped with shawarma meat (often lamb or chicken), cheese, and a variety of sauces. It’s a beloved indulgence for many, but today, we’re sharing the Healthier Chicken Kapsalon that’s just as satisfying and easy to make.

Serves: 2 People
Time: 30 Minutes Prep / 30 Minutes Cooking

Ingredients:

For the Chicken:

  • 2 Chicken thigh fillets
  • 1 tablespoon of olive oil
  • Shawarma spices (store-bought or make your own with a blend of cumin, paprika, turmeric, cilantro, and garlic powder)

For the Fries/Potato Parts:

  • Fresh fries or potato wedges (you can use store-bought frozen ones for convenience)
  • Grated 20 + cheese

For the Salad:

  • Fresh salad leaves
  • Tomato, sliced
  • Cucumber, sliced
  • Red onion sliced

For the Guacamole:

  • 1/2 red onion, finely chopped
  • 1 avocado
  • 1 jalapeño, seeds removed and finely chopped (adjust for heat)
  • Fresh cilantro, chopped
  • 1 small tomato, diced
  • Salt and pepper, to taste

For the Aioli:

  • 1 egg
  • 1 tablespoon of vinegar
  • 1 tablespoon of mustard
  • 200 ml of olive oil
  • Freshly ground black pepper, to taste
  • Garlic cloves (adjust to your preference, we used 4)
  • A pinch of salt

Preparation:

For the Chicken:

  1. Start by seasoning the chicken thigh fillets with the shawarma spices. Massage the spices into the chicken and set them aside to marinate while you prepare the rest of the meal.
  2. Heat a skillet or grill pan over medium-high heat and add the olive oil. Once hot, cook the chicken fillets for about 6-7 minutes on each side, or until they are cooked through and have a nice sear. Remove them from heat and let them rest for a few minutes before slicing them into thin strips.

For the Fries/Potato Parts:

  1. While the chicken is cooking, prepare your fresh fries or potato wedges according to the package instructions. Bake them until they are golden brown and crispy. (We used the airfryer, but ofcourse you can use an oven as well)

For the Guacamole:

  1. In a bowl, mash the avocado until it reaches your preferred guacamole consistency (smooth or slightly chunky).
  2. Add the finely chopped red onion, jalapeño, diced tomato, and chopped cilantro to the mashed avocado.
  3. Season the guacamole with salt and pepper to taste. Mix everything together and set it aside.

For the Aioli:

  1. In a blender or food processor(or even in a bowl while using a hand mixer), combine the egg, vinegar, mustard, freshly ground black pepper, garlic cloves, and a pinch of salt.
  2. Start blending the ingredients together, and while the blender is running, slowly drizzle in the olive oil until you have a creamy aioli. Adjust the seasoning if needed.

To Assemble:

  1. On a serving plate, arrange a bed of crispy fries of potato wedges.
  2. Layer the sliced chicken strips over the fries .
  3. Place the sliced chicken strips over the fries.
  4. Top it off with some grated cheese, the salad leaves and slices of tomato and cucumber.
  5. Drizzle the homemade aioli generously over the dish.
  6. Serve the guacamole on the side for dipping or as an additional topping.
  7. Optional: If you like spice, add some sambal (hot sauce) on top.
