Gochujang Noodles With Roasted Garlic And Mushrooms

Ingredients:

  • 2 tablespoons sesame oil
  • 1 head of garlic
  • Assorted mushrooms (shiitake, cremini, oyster, etc.), sliced
  • 2 tablespoons sesame seeds
  • 2 spring onions, thinly sliced
  • 2 teaspoons soy sauce
  • 1 teaspoon sugar
  • 200g udon noodles
  • Reserved noodle water
  • 1 teaspoon ginger powder
  • 1 teaspoon garlic powder
  • 1 teaspoon white pepper
  • Chili flakes, to taste
  • Olive oil, for roasting the garlic heads
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice off the top of the garlic head to expose the cloves. Place the garlic head on a piece of foil, drizzle with olive oil, and wrap tightly. Roast in the preheated oven for 30-35 minutes, or until the garlic cloves are soft and golden brown. Remove from the oven and let cool.
  3. While the garlic is roasting, cook the udon noodles according to the package instructions. Reserve about 1/2 cup of the noodle water before draining.
  4. In a large skillet or wok, heat sesame oil over medium heat. Add the sliced mushrooms and cook until they start to brown and release their juices, about 5-7 minutes.
  5. Once the mushrooms are cooked, add the sesame seeds and sliced spring onions to the skillet. Stir-fry for another 2 minutes.
  6. Squeeze the roasted garlic cloves out of their skins into the skillet with the mushrooms. Use the back of a fork to mash them into a paste and mix well with the mushrooms.
  7. In a small bowl, mix together soy sauce, sugar, ginger powder, garlic powder, white pepper, and chili flakes.
  8. Add the cooked udon noodles to the skillet along with the reserved noodle water and the sauce mixture. Toss everything together until the noodles are well coated in the sauce and heated through, about 2-3 minutes.
  9. Taste and adjust seasoning if necessary.
  10. Serve the gochujang udon noodles with smoked garlic and mushrooms hot, garnished with fresh cilantro leaves. Enjoy the explosion of flavors and the satisfying umami richness of this delicious dish!
